The Paleo Chef – Easy to follow, East to cook & Easy to eat!

I recently joined the Blogging for Books site… you should totally check it out!  Free books in exchange for a review!  I didn’t go for a fiction book to start with as some of the non-fiction books appealed to me more.  There were a couple of craft books but this cook book really stood out to me.  All of my cook books are still back in the UK so I jumped at the opportunity to have one that I could flick through and make notes in!

Here are my Sunday Sevens 😀

1. We are trying to eat better. We haven’t cut all traces of fat out of our meals because I like to have a balanced diet. But we have cut crisps (chips!) and candy out almost completely, and we are trying cook meals from scratch rather than use processed meal sauces and mixes. Here is Adam with his homemade chipotle beef burgers…they were delicious!

I loved last week’s link up!  There were so many great posts and so much talent was displayed!  I’ve been back into the swing of blogging this week and have got a couple of things made too.  I don’t know about you, but I always have so many ideas buzzing about in my head… I just don’t know where to start.  I think we all have an endless craft list!

Our Little Christmas

This year our Christmas will be like no other.  For the first time in 26 years, I won’t be having Christmas in the UK.  Our parents and my brother are coming to visit us for 3 weeks and we are having Christmas in our little apartment.  Yes, that is 7 of us in our 1 bed apartment for Christmas dinner.  We only have 2 bar stools but have managed to borrow a table to seat 6, so one of us will have to perch on a corner!

Over the years we have collected decorations that are special to us.  However, we didn’t bring anything Christmassy over to the US with us.  We managed to get a bargain of a Christmas tree from Target; a pre-lit 6ft tree for $15.  We also bought a packet of plain baubles as I am a little against glitter (it just gets everywhere!) and some candy canes.  When we first arrived in the US, we had a trip to New Orleans and we bought 2 metal skull decorations from a quaint little store.  These were added to our little for their first Christmas.

Homemade Meatballs & Pasta Sauce

Fresh food is something that really appeals to me.  Knowing that I have made something from scratch makes meals taste even better.  Sometimes, I opt for the easy option; jarred sauces, cans and pre-cooked meals…but I am trying to make the most of using the ingredients we already have in our cupboards.  This way I know exactly what has gone into my dish.

The following recipe is for easy homemade meatballs and pasta sauce.  This isn’t out of a book or from a website.  I just put a few ingredients together that we already had and it tasted lovely!
